It's that time of year. Everyone forgets about their already expanding waist lines and starts all their wonderful baking to share with family and friends. Since it is a tradition in our families to cook (A LOT!!) for the holidays, I thought I would share a holiday recipe with our LGL family as well.
The picture I posted is of a bundt cake I made called "Chocolate Mint Swirl." I have included the recipe below. Feel free to share your time honored recipes in the comment section.
Chocolate Mint Swirl Cake
Filling:
2 Packages ( 3 oz each) cream cheese, softened
1/4 Cup granulated sugar
1 TBS flour
1 egg
1/8 tsp peppermint extract
3 drops green food coloring
Cake:
1 box devils food cake mix
1/3 Cup flour
1 Cup water
1/2 Cup butter, melted
2 eggs
Chocolate and Mint Glaze:
2 TBS semisweet chocolate chips
1 tsp shortening
1 Cup powdered sugar
1/4 tsp peppermint extract
1 or 2 drops of green food coloring
1 TBS corn syrup
3 or 4 tsp water
1. Heat oven to 325 degrees. Grease bottom and side of bundt cake pan. Lightly flour.
2. In a small bowl, beat cream cheese with electric mixer until smooth and fluffy. Add granulated sugar, flour, egg, extract and food coloring. Beat until smooth. Set aside.
3. In a large bowl, beat cake mix, flour, water, butter and eggs with electric mixer on low speed for 30 seconds and then medium speed for 2 minutes. Pour into pan and spoon cream cheese filling over the batter.
4. Bake 46 to 52 minutes or until toothpick inserted in cake comes out clean. Cool for 15 minutes. Turn pan upside down onto heatproof plate and remove the pan. Cool completely;about 2 hours.
5. In a saucepan, heat chocolate chips and shortening over low heat, stirring frequently until melted. Set aside. In a small bowl, mix powdered sugar, peppermint extract, food coloring, corn syrup and water. Drizzle glaze over cake. Immediately spoon melted chocolate over glaze in a zig-zag pattern. Working quickly, pull a toothpick through chocolate to make swirls. Let stand 30 mins or until set. Store in refrigerator. Serves 16 or more.
Enjoy!!

LGL Christmas Party 2013
December 7, 2013 LGL had their Christmas party for shareholders. Many participated in the toy and food drive and it made the beautiful Christmas tree look like a typical tree in a home with children and love. The packages were wrapped in pretty paper and bows and the lights twinkled like stars. All the decorations were done by ladies on the lake and looked amazing. There were poinsettias, Santa's, stuffed animals and more gracing the tables and adding to the festive spirit.
The party started with our president, Ms.Hazel, welcoming everyone to the party and laying out the order of festivities. Prayer was given in thanks for the food and fellowship.
We were also blessed with the surprise attendance of Hunter Daniels accompanied by his mom, Carla, and his sister, Ambur. This was Hunter's first trip outside of his home since his accident earlier this year. He was walking with the aide of crutches and had a smile for everyone. We all gave thanks for his miraculous recovery and continue to pray for his healing.
After everyone enjoyed a meal of turkey, dressing, various side dishes and dessert, the attendees were invited to play a "white elephant" game. Those that brought a wrapped gift were given a number and each had an opportunity to select a gift or swap with someone who had a gift that they wanted. Hilarious fun ensued as people "stole" others gifts or got a surprise opening another.
After the game, we sang Christmas carols. The many voices rang pure inside the pavilion walls. It was a time of sharing our love for this holiday season. It also made for some funny moments as well. Watch the video attached and you can hear the beautiful voices as well as see some funny moments.
The night ended with well wishes for the coming Christmas holiday with family and friends.
The LGL members send a great big thank you to all who participated, organized and decorated. It was a fun night for all.

Long Glade Lake History and Information
Welcome to the Long Glade Lake Community and our beautiful, private lake! I will be posting our current events, family news, projects and more through once-a-week postings. Feel free to add your email address to our "contact" area so that you will automatically receive each new posting. You may also send pictures you would like to see included to our email for this blog at longgladelakelady38@yahoo.com. Keep on reading for the history of our little community.
Long Glade Lake Corporation was incorporated in 1939 as a fishing club by 10 original members who had purchased the property strictly as a fishing club. Numerous shareholders were eventually added with an eventual membership of 50 shareholders. The lake property included around 100+ total acres inclusive of the 50 surface acres lake.
Each shareholder was assigned a block of land (lot) that was marked by staking out the lots in a crude manner of marking trees and rocks as the dividing lines between lots. Eventually, as time progressed, all of the lake property and lots were surveyed to establish legal metes and bounds to eliminate future arguments as to property boundaries. Members sold their shares and rights to given property to family members and friends (approval of Board is required) and the growth of LGL began. The value of the shares was based on whatever shareholders could negotiate.
About 25-30 years ago, the county built a new dam and widened County Road 2127 making it available to landowners in the general area. As you drive around the lake, you can see evidence of some old fishing cabins that were built 30-40 years ago along with some makeshift piers and boathouses. A lot of the older structures have been removed and new homes began to replace old cabins. In the last 15-20 years, around 25 permanent residences have been established on the lake.
Property values have soared over the past five years, partially due to LGL becoming a gated entry lake as well as promotion by local realtors. LGL property is very attractive because of our lot sizes, secured entry, annual dues, no Corporate debt, and reasonably priced lots.
LGL has nine board members, (president, vice president, secretary/treasurer and six other board members) who all own shares in LGL. All LGL business must be approved by a majority of board members.
