It's that time of year. Everyone forgets about their already expanding waist lines and starts all their wonderful baking to share with family and friends. Since it is a tradition in our families to cook (A LOT!!) for the holidays, I thought I would share a holiday recipe with our LGL family as well.
The picture I posted is of a bundt cake I made called "Chocolate Mint Swirl." I have included the recipe below. Feel free to share your time honored recipes in the comment section.
Chocolate Mint Swirl Cake
Filling:
2 Packages ( 3 oz each) cream cheese, softened
1/4 Cup granulated sugar
1 TBS flour
1 egg
1/8 tsp peppermint extract
3 drops green food coloring
Cake:
1 box devils food cake mix
1/3 Cup flour
1 Cup water
1/2 Cup butter, melted
2 eggs
Chocolate and Mint Glaze:
2 TBS semisweet chocolate chips
1 tsp shortening
1 Cup powdered sugar
1/4 tsp peppermint extract
1 or 2 drops of green food coloring
1 TBS corn syrup
3 or 4 tsp water
1. Heat oven to 325 degrees. Grease bottom and side of bundt cake pan. Lightly flour.
2. In a small bowl, beat cream cheese with electric mixer until smooth and fluffy. Add granulated sugar, flour, egg, extract and food coloring. Beat until smooth. Set aside.
3. In a large bowl, beat cake mix, flour, water, butter and eggs with electric mixer on low speed for 30 seconds and then medium speed for 2 minutes. Pour into pan and spoon cream cheese filling over the batter.
4. Bake 46 to 52 minutes or until toothpick inserted in cake comes out clean. Cool for 15 minutes. Turn pan upside down onto heatproof plate and remove the pan. Cool completely;about 2 hours.
5. In a saucepan, heat chocolate chips and shortening over low heat, stirring frequently until melted. Set aside. In a small bowl, mix powdered sugar, peppermint extract, food coloring, corn syrup and water. Drizzle glaze over cake. Immediately spoon melted chocolate over glaze in a zig-zag pattern. Working quickly, pull a toothpick through chocolate to make swirls. Let stand 30 mins or until set. Store in refrigerator. Serves 16 or more.
